
When I was packing food for our days on the mountain, I threw in packs and packs of pita bread.
First of all, unlike bread, you really can’t squish pita bread. So you can throw caution to the wind and really pack it in tight, saving more room for your delicate dark chocolate. Second of all, it tastes good by itself, or with a dip, or as a sandwich, or as dried pita chip. Third of all, everyone loves pita bread. I’ve never met a kid that didn’t like the texture and chewiness of pita bread. We just love pita bread in our family. I remember eating a lot of it as a kid.
If you’re lucky you can even pick it up straight from a pita bread bakery. This guarantees that it’s as soft and pliable as it can get. You might even save a bit of dough (ha-ha), by purchasing it day old. Which at the actual bakery, means it’s day old, still soft and pliable, but the price is way less than what you’d pay at a grocery store.
Here are the Top Five Pita Bread Lunches in My Family:
1. Pita Bread as a base for a gourmet pizza: Each family member gets their own pita pizza base. Let the kids build their own pizza based on their preferences. My youngest prefers no red sauce, so this works out perfect. I like caramelized onions, so I am happy to pile on the onions…
2. Pita Bread and Melted Cheese: Place a few cheese slices (processed, cheddar, brie) on half of the pita and fold. Wrap with a paper towel and put it in the microwave for 30 seconds. (This idea I got from my girlfriend when I was a teenager.)
3. Pita Bread dipped in Hummus: Or should I say Yummus? Mmmmm…Tip: Cut your pita bread with scissors. (The scissors idea I got from my smarty pants Aunt.) I am surrounded by very intelligent people!
4. Pita Bread stuffed with lettuce, tomatoes, deli chicken & mayo. Any of your favourite sandwich fillings will do. The chewiness of the pita bread makes the sandwich so much more enjoyable than mushy, no texture standard bread.
5. Pita Bread and Falafel: Falafels are those yummy little balls of chickpeas and fava beans. You can usually buy them in the frozen foods section of your grocery store. Put two of them on a pita (mash them down), top with plain yogurt (or tatziki), a bit of diced radish and diced dill pickle, tomato and Enjoy!
