It's Always a Good Day for Salad

I had a salad addiction. It's bordering on out of control. I have at least one a day. My record is three. Not three side salads. Three entrées. And I don't subscribe to the school of wimpy piles of lettuce. My masterpieces are made in mixing bowls (because you can never consume too many leafy greens), packed with entire peppers, tomatoes, and generous helpings of protein.
